Dal bhat. The food of a nation. Nepal lives on this stuff. Dal is lentil soup, bhat is rice. The simple form is served with tarkari (curry), pickle, and greens (spinach mostly) when in season. A fancy version comes with papad (thin cracker) and curd too.
When I arrived in Nepal my stomach was slightly upset and I didn’t want any of it. Now I can’t get enough of it. Especially when cooked all from fresh by Sudip’s mother or the three sister at Panchase.

An example Tarkari recipe explained by Sudip, Gundruk: Firstly green spinach or lettuce is crushed gently and it air tied & let it 7-12 days in sun after this shoury lettuce is dried for 3-5 days in sun & it will be lighter brown after this we can get tasty soup from it which feels you warmer & suitable on winter or rain.
